Anzac Biscuits

The 3-month, halfway-around-the-world trip that myself and Peter made in the latter half of 2009 has so far been one of the most memorable events of my life.  A 30+ hour flight to New Zealand, backpacking,  driving a camper van through vast empty stretches of the countryside without another vehicle in sight, spending a special day on an almost empty beach resort on an almost remote island in Malaysia, riding a roller coaster built within a shopping centre in Kuala Lumpur – these are just a few of the exhilarating experiences we had during our trip.

Of course,  food formed a very important part of the journey and experience as well. From great quality organic food in New Zealand (we tasted, by far, the best meat we’ve ever had in NZ) to the exotic fusion cuisine that’s the hallmark of Malaysian food, I only have mouth watering memories of food in the countries we visited.

One such food item I tried and fell immediately in love with are anzac biscuits. I later learned that these chewy, coconutty biscuits are a mainstay of Australia and NZ.  The story goes that these biscuits were made by soldiers’ wives to be sent to their loved ones since they keep for long and don’t go bad so easily.

Nothing Beats Home-made Pizza

A warm slice of pizza with delicious toppings and melting cheese devoured while watching the telly is stuff Friday evenings and lazy weekends are made of.

As easy as it may seem to pick up the phone and order a quick pizza or pop a frozen pizza into the oven, nothing quite beats the fresh taste of home-made pizza. Self-made pizza including the dough for the base and a wild choice of toppings is a different story altogether.

Strawberry Torte

One of my dear friends from work bid adieu to us last week. She decided to move on and out of Dublin to pursue other opportunities. Sad though it was, we decided to make her last day special with a small going away party with gifts and goodies.

I’d bought a copy of the BBC GoodFood Baking magazine just a few days earlier and was enchanted by the variety of recipes I found inside. There are recipes for cakes, cookies, savoury pies and much more packed within a few pages. At the risk of turning my work colleagues into culinary guinea pigs, I decided to try out the delicious looking strawberry cinnamon torte and take it to work.  Strawberries are in season right now and the bright pink/red strawberry packets have been beckoning me whenever I walk by them in stores. So, I thought there was no better reason and time to make use of these fresh berries.

Dutch Pannenkoeken

We recently made a weekend trip to Holland to join Peter’s family for a get-together. The Dutch love camping, so it was no surprise that the venue was a camping site where everybody converged with their caravans and camping paraphernalia. We were the only ones who didn’t have our own little home-on-wheels and were put up in a tent attached to one of the caravans parked there. Although I’ve been on a camping trip, travelling in a campervan through the length and breadth of New Zealand, I was a bit apprehensive about the arrangement. However, my doubts were unfounded as soon as we got to the camping site.

It was a lovely secluded spot surrounded by woods with lush greenery all around not to mention the excellent facilities all around the site. At night, we lay in our little tent listening to the sounds of crickets and other nocturnal creatures outside, reminding me of home and Indian summers.

One of the highlights of our short trip was dinner at the pancake restaurant. The Dutch eat both sweet and savoury pancakes for dinner instead of breakfast. Apparently, pancake restaurants exist all across the country and are popular dining spots for families. So there we were, the entire clan, the old, the young, babies, and children all eagerly awaiting our hot pancakes from the kitchen.

Easy Roast Chicken

I’ve heard that roasting a chicken is one of the easiest things to do in the world. I wasn’t quite sure about this myself until I recently tried a simple roast chicken recipe I found online. I think what could go wrong with roasting any kind of bird is that the meat may either be dry and overcooked or undercooked. The recipe I followed was foolhardy and resulted in a roast that was moist on the inside with a crunchy, crispy skin on the outside.
