Apricot Almond Cake

If you are like me and keep buying irrestibily good looking fruit and then wonder what to do with it, then this recipe is for you. I originally found this Dan Lepard recipe for an apricot tart quite interesting. However, when I finally got down to using up some lovely apricots I got from the supermarket, I decided to make a cake instead.

I would change just one thing if I were to make it again – I’d use a slightly bigger cake tin. The 20-inch tin I used made the cake thicker than I wanted it to be and hence, it was difficult to cut a truly modest slice. Not a bad thing however if you’re in the mood for some indulgence.

Simple Strawberry Icecream

When you pick bucketfuls of strawberries every other day from the garden, you have to come up with novel ways of using the fruit up before they go bad. And although icecream is hardly anything novel, it’s just perfect for a sunny day. It also gave me an excuse to use my recently acquired signed copy of ‘The Perfect Scoop’ by David Lebovitz. Notice that I mention ‘signed’.

Cherry Clafoutis

I have always wanted to make a clafoutis. So when I spotted ripe red glossy cherries at the local market here, I knew this was the right time to try out one. Since my first visit to the market and local vegetable/fruit shop in our area, I’ve been eyeing these cherries, so last weekend, I got a bunch determined to finally make a clafoutis.

Coconut Cardamom Lemon Cake

Sometimes I get this strong feeling to bake something. It usually strikes over the weekend (although, we’re off full time work at the moment so every day is a weekend day ;)), on those lazy days when you’ve not done anything too productive and feel like filling the afternoon hours with some kitchen activity.

This last weekend was one such time and when we were in the supermarket, I stood in the baking products aisle for a good few minutes wandering up and down without much inspiration. This is when Peter suggested what about making a simple sponge cake maybe flavoured with lemon and cardamom? Not a bad idea I thought. Later at home, I found an unused bag of dessicated coconut in the kitchen cupboard and decided to throw that in too. I’ve always liked the flavour of coconut in both sweet and savoury dishes, maybe it’s got to do with the coconut rich food I grew up with but it instantly comforts me.

Roasted Pineapple & Coconut Meringues

Quite a while ago, I was browsing through the food section on guardian.co.uk and chanced upon an interesting recipe by Dan Lepard. I’ve tried a couple of his recipes in the past and have never been disappointed. So I decided to try out the ‘roast pineapple, coconut meringue and rum cream’.

The only ingredient I forgot to put on my shopping list was the cream to make the rum cream so I replaced it with some raspberry sauce as there were some frozen raspberries lying in our freezer waiting to be put to good use.
